Recipe Idea – Crumbly Apple Cake
Oven 190 C/ gas mark 5
100g polenta
225g plain flour
1 tsp baking powder
125g sugar
rind and juice of an unwaxed lemon
125g butter or margarine
1 egg
2 tbsp olive oil
450g cooking or soft apples, peeled, cored and sliced
75g soft brown sugar

Mix everything together apart from 1 tbsp lemon juice, the apples and soft brown sugar. Press just over half of this mixture into a lined 9 inch cake tin. Separately combine the leftover lemon juice with all the apples and 50g of the brown sugar. Layer these on top of the base. Crumble the remaining 'pastry' on top of the apples and sprinkle over the last of the brown sugar.
Cook for about 40 minutes or so, until golden brown.
Delicious hot or cold.
